While I may not suffer from full blown Celiac Disease, my symptoms and current lifestyle are very similiar. I've been diagnosed with Gluten Intolerance since August, 2008 and still struggle to cope with the "Gluten Free Lifestyle". My current goal is to help spread Gluten Awareness via this blog and other media outlets. National Celiac Awareness Month seems like a good time to step it up a little. I will be posting much more content to this site this month to help others who have been recently diagnosed or continue to struggle. Below are a few reminders of what we can and cannot eat.
Let's start with the definition of Gluten. Gluten is actually a generic name for certain types of proteins. These are often contained in the form of many common cereal grains, wheat, rye, barley and their derivatives.
Grains and Flours that are acceptable:
- Rice
- Corn
- Soy
- Potato
- Millet
- Tapioca
- Sorghum (New Grist
)
- Buckweat
- Nut Flours
- Flax
- Teff
- Beans
Foods that are NOT allowed:
- WHEAT
- Barley
- Rye
- Triticale
