Gluten Free Brown Sugar Glazed Carrots

Want your kids to eat carrots. Here is a great gluten free recipe for carrots that will make a great side dish for about any meal.


1/2 a cup of chicken broth
1 tbsp of butter, unsalted
1/2; cup of water
1/2 tsp of ground cumin
1 tbsp light brown sugar, packed
3/4 pound of carrots, but into coin shapes
1/2 tsp salt (you may need more for seasoning purposes)
1 tsp lemon juice (preferably freshly squeezed)


In a skillet, take the brown sugar, butter, broth, 1/2 tsp of salt, cumin, and water, and then cook over medium heat until it comes to a boil. Stir well until you make sure all the brown sugar has been dissolved. Add in the carrots to the mixture. Reduce heat and then simmer the carrots, covered, until they are almost tender. This should take about 4-5 minutes.

Uncover your skillet and allow the liquid to cook down a bit until it turns into more of a glaze. This takes about 2-3 minutes. Toss the carrots in the glaze and then stir in the fresh lemon juice. Add a bit of salt to your own taste. Place the carrot mix in a serving bowl and then they are ready to serve.
